Thinking of the worst experience I’ve had. Little things are annoying for any sushi chef.

Ordering an omakase for you and your date and asking the chef to either cut the nigiri in half or just make smaller nigiri. Super annoying to cut nigiri and chances are high that you’re just cheap. Horrible.

Any vegetarian sushi for the most part, drives me nuts. I got a lot of love for my vegans/veggies and veggie sushi is sushi. That being said, damn it if you want me to make your cucumbers look cute, I'll do it. I suppose it just takes longer in most cases. Horrible.

Food allergies are annoying but of course that’s no one’s fault. Mostly I just have to very thoroughly clean my station, my knife, whole nine. I’m not trying to kill anyone but it is a whole ordeal to ensure safety.

Probably the most annoying shit at sushi bar is some fuck that’s been to Japan once and thinks he/she knows some shit. It’s not like I’m going to blow up your spot while you’re trying to impress your date, but just from me to you, forget that everyone behind sushi bar is internally rolling their eyes and accommodating your ego – in my experience it’s just so much sexier when people find out cool shit about you organically from other sources. It’s probably my favorite way to discover people.

Extra points for asking if a chef has XYZ fish because you had it in Japan. If you don't know when that fish is in season, don't ask.

I look back fondly now, but I will say that my first busy Saturday shift was a doozy. In retrospect it was probably a normal Saturday. When you’re new and inefficient, slow, trying to prove yourself, when you actually care and aren't trying to fuck up left and right – gets heavy. After service, I sat there on the bathroom floor with my head down gripping my hair thinking I’d never be any good. Part of the process.

At the end of the day, every job is annoying at times. Just know that behind sushi bar is no joke. Let line cooks at Applebee’s fuck around. Or at the least, this is the mentality that my teachers have instilled in me.

And I’m grateful.
