God’s honest truth, I’m running out of shit to talk about.
Partially because I find myself in a bubble. I don’t know what the wide range of people’s palettes are like, or what they think about sushi in general, or what they are curious about knowing.
I met someone recently that has never had sushi before. Not that they have zero interest, or they don’t trust the idea of eating raw things. Just never had it.
I don’t remember the first time having sushi. I do know it was when I was a child. Like most things, you learn the non-traditional way first. Some might call it the improper way.
I don’t believe in such things, and yet I do. You’ll never see me if cream cheese in sushi. I like the toppings on nigiri for sure but once it starts to look like one of those bloody Marys with a hamburger on a stick with pickle and what not, kinda silly.
I’ll always revert back to, “you like what you like.” It’s your food, what do I care?
There’s this method called ikijime that I’m learning about. I’m never going to do it or even see it really.
Basically, they really only do it in Japan. It’s the way they kill the fish. They take a spike and it goes straight to the brain, very humane, instant death. Then they run a wire down the fish’s spine to minimize muscle movement. I don’t know really anything about this method but I’m researching because it’s interesting. My teacher said that the main benefit is that the fish tastes better.
He said if the fish is stressed or panicked when it dies, the meat will actually not taste as good. I assume it’s something like, the muscles tense up when it dies and something about lactate, no idea.
I say all this to say, that’s how I feel as a writer right now on this subject.
