Sushi Confidential: Showbiz and reality

Sushi Confidential

Season 4 of The Bear dropped and I have to admit, wasn’t a huge fan. Love the show, don’t want to spoil anything, loved the subtle nod to Kitchen Confidential. The Bear has earned being a piece of art and not just entertainment, but season 4 didn’t hit for me.

We don’t do family meal at the joint I work at. Everybody gets an employee meal. Whenever I get sushi, the old man gives me the best fish. Maybe because it’s the last shift before the weekend but to me, it’s always because he knows how much I love sushi.

Sushi should be eaten immediately. If I get a second, I eat it in the back of the restaurant sitting on top of a plastic bin. Fresh towels get delivered in bulk, big bags wrapped in plastic. I use them as a table.

Every time I eat back there, I think of how sushi is fancy and whole nine. It’s oddly comforting eating a $100+ omakase dinner sitting on a bucket in the back.

Kitchen staff will come back every now and then. I love all the young guys. They call me Unc every now and then. I thought it was a term of endearment, but they just think I’m old.

I’ll save you the details partially because they’re too personal and not my place. He was not ok.

It was so symbolic. One of the cooks was going to sit leaning on this bar that had a bowl of food on it. I tried to stop him. He knocked it over and it broke.

He laughed. Thanked me for trying. I replied, “what do you think I’m doing here?”

I think that’s sums up restaurants at least partially. The camaraderie and being there for each other. You can call it family. It’s not just a show for TV.

Probably the main reason why I like The Bear. Funny because it’s got me thinking. Who would I be in the show?

I crack wayyyy more jokes than him but, I’d probably say I’m most like Marcus.
